Recipe Ingredients for Morroccan Bean And Pepper Stew

1 tablespoon olive oil
2 cups chopped peppers, sweet
2 cups butternut squash, cubed and peeled
1 1/2 cups onion
2 tsp cinnamon
2 garlic cloves
1/2 tsp ground ginger
1/4 tsp pepper
1/4 salt
4 eggplant
200 grams chickpeas

Recipe Directions for Morroccan Bean And Pepper Stew

  1. For the stew heat oil in pan on medium-hi het. Add peppers, squash, onions and stir 5 minutes or until softens.

  2. Add spices Stir for 1 minute

  3. Add rest of ingredicents, and reduce to simmer and cooked covered for 20 minutes or until softs.
