Recipe Ingredients for Morrocan-style veggy stew

300 grams Tomatoes Whole Peeled
2 small Onions
137 grams Garbanzo Beans (Chick Peas), Organic
0.5 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
250 grams Spinach
1 1tsp Olive Oil
5 g Cumin Powder
1 dash Pepper, Black
1 clove Garlic
2 tsp Garlic Powder
1 tsp Oregano, Ground
1 cup Vegetable Stock

Recipe Directions for Morrocan-style veggy stew

  1. fry the onions in the oil with cumin, pepper, garlic powder and a teaspoon of tumeric.

  2. when the onions are clear(ish) add the pepper, fry for a further minute

  3. Add a tin of tomatoes and the drained chick peas. Add the stock- I used a Knorr stock pot, directly to the stew. A little water may be needed if it looks a bit thick.

  4. Add a clove of chopped garlic. I love garlic.

  5. Cook this on a low heat for about 30 minutes, adding the spinach last, and cooking it until it wilts.

  6. Serve with pitta, rice, or whatever takes your fancy!
