Recipe Ingredients for Morrocan Root Vegetable Stew

2 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
4 serving Chicken Broth
1.5 cup, cubes Turnips
1.5 cup, cubes Yam
2 cup, chopped or diced Chicken, Breast, Meat Only
3 oz Tomato Paste
1 miniature box (.5 oz) Raisins, Seedless
1 small Onions
4 tsp Cinnamon, Ground
1 tsp Chili Powder
2 tsp Curry Powder
1 serving Ground Cumin Seed
1 medium (7" to 7-7/8" long) Bananas

Recipe Directions for Morrocan Root Vegetable Stew

  1. Cook garbanzos if using dried ones. Cook chicken breast and set aside.

  2. Add chicken broth to large soup pot. Put in yams and turnips, peeled and cut in 1" cubes. Chop onion fine and add to pot. Heat to boiling. Ladle out some hot broth and mix in tomato paste. Return to pot.

  3. Add spices and sliced banana.

  4. Cook 45 minutes.

  5. Add garbanzos, chicken (chopped) and raisins.

  6. Cook 45 minutes longer.

  7. Serve with coconut milk and pita bread.
