1.5 chicken breasts 1 onion sliced 3 cloves garlic 2 tbsp olive oil 1 tsp salt (to taste) 1 1/2tsp Ras el hanout 1 tsp Turmeric 1/4 tsp ground black pepper 1/4 tsp cayenne pepper 1 cinnamon stick ------------------------------ 3 tomatoes 1 cup chopped coriander leaves 1 cup chopped parsley --------------------------------- 2 tbsp honey 1/3 cup dried apricots chopped 425g canned chickpeas drained

Recipe Ingredients for Morrocan Chicken...

1 1/2 breast, bone and skin removed Chicken, Breast, Meat Only
2 large Onions
3 clove Garlic
2 tbsp Olive Oil
1 tsp Salt, Table
1 1/2 tsp Ethnic Seasoning Ras El Hanout
1 tsp Turmeric, Ground
1/4 tsp Pepper, Black
1/2 tsp Pepper, Red Or Cayenne
3 large whole (3" dia) Tomatoes, Red, Ripe
1 cup Coriander Leaves
1 cup Parsley
2 tbsp Honey, Strained Or Extracted
1/2 cup, halves Apricots, Dried, Sulfured, Uncooked
1 cup Peas Chick

Recipe Directions for Morrocan Chicken...

  1. Mix the chicken (diced), onion, garlic, oil and spices. Cover and cook over medium heat, stirring occasionally for 15-20 minutes.

  2. Add tomatoes (skinned), coriander and parsley (chopped). Continue to cook stirring occasionally for another 15 mins, a rich sauce should develop.

  3. Add apricots, chickpeas and honey, continue cooking for another 15 mins. If the chickpeas absorb to much liquid then feel free to add water to thin the sauce to its original consistency.

  4. Serve with rice or couscous.
