Really delicious meal that is inexpensive and healthy. Nice twist on baked chicken. I like to use chicken drumsticks and/or thigh/quarters, but breast meat would make it even leaner. Can also be served with a nice naan bread and green salad.

Recipe Ingredients for Morrocan Chicken with Jasmine Rice

2 1/2 lbs chicken, skin removed
2 tbs paprika
1 tbs coriander
1 tbs cumin
2 tsp cinnamon
1 tsp turmeric
1 tbs olive oil
1 medium onion
3 cloves garlic
1 1/2 cups chicken stock
1/4 cup honey
1/2 cup olives
1 fruit+2-3/8"+dia lemon
1/2 chopped dates
2 cup jasmine rice

Recipe Directions for Morrocan Chicken with Jasmine Rice

  1. - combine all spices in a medium sized bowl

  2. - rinse and pat dry the chicken then coat thoroughly in spice mixture, cover and store in fridge for at least 1 hr (can even be overnight)

  3. - while chicken is marinating

  4. - pit and coarsely chop the dates & green olives

  5. - thinly slice the lemon and set aside

  6. - chop onion and finely mince garlic

  7. - heat oil in large dutch oven

  8. - brown spiced chicken in hot oil for about 3-5 min on each side

  9. - add chopped onion and garlic, cover and cook for 15 min or so

  10. - add chicken stock, dates, olives, honey, and lemon and mix thoroughly

  11. - bring to a simmer and cook for another 25-30 min

  12. - prepare jasmine rice
