Recipe Ingredients for Moroccan Winter Vegetable Stew

2 tbsp Extra Virgin Olive Oil
1 medium (2-1/2" dia) Onions
3 cloves, raw Garlic
2 tsp Paprika
1 tsp Salt, Table
0.5 tsp Pepper, Black
0.5 tsp Spices Ground Coriander
0.5 tsp Cumin
0.5 tsp Ginger, Ground
0.5 tsp Pepper
1 cup (8 fl oz) Water
14.5 oz Tomatoes, Red, Ripe
2 tbsp Lemon Juice, Canned Or Bottled
3 cup, cubes Squash, Winter, Butternut
2 cup, chopped Carrots

Recipe Directions for Moroccan Winter Vegetable Stew

  1. Heat oil in large saucepan over medium heat.

  2. Add onion; sauté until soft, stirring often, about 5 minutes.

  3. Add garlic; stir 1 minute.

  4. Mix in paprika and next 8 ingredients.

  5. Add 1 cup water, tomatoes, and lemon juice. Bring to boil.

  6. Add squash and carrots. Cover and simmer over medium-low heat until vegetables are tender, stirring occasionally, about 20 minutes.

  7. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and chill.)
