This is a great recipe for the winter days, with so much nutrition and great flavour. Can use any combination of veggies, root veggies are best. The spices are the key to this flavour. If too much, you can always make into soup and freeze.

Recipe Ingredients for Moroccan Vegetable Stew 0r Soup

2 T olive oil
160 g onions, chopped
4 cloves of garlic, pressed
1/2 tspn ground cinnamon
1 tspn turmeric
1 tspn cumin
1/2 tspn paprika
1/2 tspn cayenne pepper
1 tspn coriander
12 g vegetable stock
2 cups water
278 g butternut squash, diced
190 g zuchini, diced
132 g eggplant, diced
164 g cauliflower, chopped
174 g sweet potato, diced
120 g green bell pepper, sliced
92 g carrots, sliced
240 g chick peas, drained
411 g stewed tomatoes, chopped

Recipe Directions for Moroccan Vegetable Stew 0r Soup

  1. Saute Onions with the garlic and spices

  2. add a little water

  3. Then add all the vegetables, except for chick peas and stewed tomatoes

  4. Then add the remaining water with crushed stock

  5. Once the vegetables are cooked to liking, add tomatoes and chick peas, do not boil.

  6. Then take out a few large tablespoons of veggies and place into a blender to pulp, careful as it is very hot

  7. Then add back to the stew and mix in.

  8. Serve with cous cous

  9. Or you can blend it all and make soup.
