Flavorful combination of winter vegetables and beans

Recipe Ingredients for Moroccan Vegetable and Bean Stew

1 T. olive oil
1 onion, chopped
4 cloves garlic, minced
1 t. salt
1 t. cumin
1 t. coriander
1 t. caraway seeds
1 t. cinnamon
1 t. ginger
12 oz. garbanzo beans, (1 can, drained)
12 oz. tomatoes, diced (1 can)
2 c. butternut squash, peeled and diced
8 oz. turnips, sliced
3 c. turnip greens, chopped
2 c. chicken broth
1/2 c. raisins

Recipe Directions for Moroccan Vegetable and Bean Stew

  1. In large soup pot, saute onion and garlic in oil until transparent.

  2. Add spices and cook for 2 minutes to release flavors.

  3. Add squash and turnips and toss to coat with spices.

  4. Add broth (or water), bring to a boil, cover pot and simmer for 15 to 20 minutes.

  5. Add beans, tomatoes, and greens. Simmer for 5 minutes or until greens are tender.

  6. Serve with brown rice or couscous.
