Recipe Ingredients for moroccan stew

1/4 cup olive oil
3 cups chopped onion
2 cloves garlic, minced
1 tsp cumin
1 tsp turmeric or curry
1/2 tsp cinnamon
1/4 tsp cayenne
1/2 tsp paprika
1 cup sliced carrots
4 cups yam, peeled, cubed
3 cups eggplant, cubed
1 green pepper, cut in strips
4 cups sliced zucchini
2 large tomatoes, chopped
1 1/2 cups chickpeas, canned
3/4 cup currants
1/4 cup chopped parsley
1/2 cup tomato juice

Recipe Directions for moroccan stew

  1. saute onion, garlic and spices

  2. add vegetables in the order listed, saute each until color deepens before adding the next

  3. stir in beans and currants, add tomato juice (more if stew seems dry), add parsley

  4. cover, simmer on low until vegetables are tender
