Low cal vegetarian stew. Serve with rice or have on its own.

Recipe Ingredients for Moroccan stew

1 tbsp olive oil
1/2 c. celery, chopped
1 c. green pepper, chopped
1 c. onion, chopped
3 cloves garlic, minced
2 tbsp ginger, minced
2 tbsp lemon juice
14 oz canned tomatoes
1 c. chick peas, canned drained
3 c. vegetable broth
3 c. sweet potato, cubed
1 tsp curry paste
1 tsp ground cumin
1 tsp ground coriander
1 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
2 tbsp peanut butter
2 tbsp fresh cilantro, chopped

Recipe Directions for Moroccan stew

  1. Heat oil.

  2. Cook onion, celery, green pepper and garlic until starts to soften - about 5 minutes.

  3. Add remaining ingredients except peanut butter & cilantro.

  4. Bring to boil and simmer until vegetables are cooked - approx. 25 minutes.

  5. Add peanut butter and cilantro.

  6. You could also add some hot sauce if you want more heat.
