This exotic dish can be adjusted to add any meat or additional vegetables you'd like. Is great served over couscous, brown rice, or quinoa. Accompany with a pinot gris.

Recipe Ingredients for Moroccan Stew

1 large Onions
2 medium Carrots
1 stalk, large (11"-12" long) Celery
2 clove Garlic
6 tsp Ginger Root
2 tsp Turmeric, Ground
2 tsp Pepper, Red Or Cayenne
1 tbsp Cumin Seed
1.5 tsp Oregano, Ground
2 tsp Paprika
2 cup Soup, Chicken Broth
1/2 cup Crushed Tomatoes
14 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
2 fruit (2-1/8" dia) Lemons
3 tbsp Olive Oil

Recipe Directions for Moroccan Stew

  1. Heat olive oil in large sautee pan over medium-high heat.

  2. Chop onions, carrots, and celery. Sautee until tender, about 5 minutes.

  3. Mince garlic and fresh ginger root, add to sautee pan, and cook until fragrant about 3 minutes.

  4. Add all dry spices, mix and cook for 1 minute.

  5. Add chicken broth and crushed tomatoes, as well as any meat you want to use (be sure meat was browned beforehand)

  6. Simmer for 10 minutes

  7. Add sliced lemons (I used prepared lemons, lemons that are 'pickled' and a favorite to use in Eastern cuisines)

  8. Add any additional vegetables you'd like (zucchini, squash, broccoli, and cauliflower work great!)

  9. Simmer for 15 minutes more. Cover for thinner sauce or leave uncovered for thicker sauce.
