Recipe Ingredients for Moroccan Spiced Sea Bass

18 ounces sea bass fillets, net from 24 ounces raw, about 1 inch thick

Marinade:
1/4 cup fresh lemon juice
1 tbsp chopped cilantro
1 tsp cumin
1/2 tsp crushed red pepper
4 garlic cloves, crushed

Spice Rub:
2 tbsp ground coriander
2 tsp black pepper
1 tsp caraway seeds
1 tsp cumin
1 tsp paprika
1/4 tsp salt

Recipe Directions for Moroccan Spiced Sea Bass

  1. Combine marinade ingredients and fish in a bowl or in a zip-lock plastic bag. Refrigerate for approximately 45 minutes. Remove fish and discard marinade.

  2. Mix the spice rub ingredients together and rub all over each sea bass fillet.

  3. Heat 1 Tbsp olive oil in large nonstick skillet over medium heat. Add sea bass fillets. Cook approximately 7 minutes on first side and 6 minutes on the other side. Garnish with lemon wedges and cilantro sprigs.
