It's called "soup", but I like it a little thicker - more like stew. This recipe is adapted from the orig which says it serves 6 - maybe not as a main dish. I cut it into ~1/3 for a single serving, full meal.

Recipe Ingredients for Moroccan Spiced Chickpea Soup

1 tbsp Extra Virgin Olive Oil
1/3 Onion
2 clove Garlic
5 grams Cinnamon, Ground
1 teaspoon Cumin, Ground
1 tsp Paprika
1/10 tsp Pepper, Red Or Cayenne
1 serving PS Organic Garbanzo Beans - 15 oz can
2 serving PS Organic No Salt Diced Tomatoes - 1/2 C
1/4 tsp Sugars, Granulated
1 c spinach
1 serving Pacific Organic Chicken Broth - low sodium - 1 C

Recipe Directions for Moroccan Spiced Chickpea Soup

  1. Heat Olive Oil in large saucepan over medium high heat. Add onion and garlic & saute until onions begin to turn translucent; lower heat if browning starts to occur. Add spices and saute a minute or so. Add tomatoes, chickpeas, broath and sugar. Season witha couple pinches of salt and 3 grings of fresh pepper. Stir well. Chickpeas should be just covered with liquid. If level is shy, add some water.

  2. Bring to a simmer, then lower heat to low and gently simmer for 20ish minutes (orig recipe 3x says 45, but that's too long).

  3. Remove soup from heat. Use a potato masher to mash up some of the chickpeas in the pot. Stir in the spinach and let heat through until wilted - a couple minutes.

  4. Season again, to taste, with S&P
