Recipe Ingredients for Moroccan meat & lentil soup

1 clove Garlic
1 cup, chopped or diced Chicken, Breast, Meat Only
1 1tsp Olive Oil
3/4 medium White Onion
1 cup, diced Celery
1 serving tumeric root
1 tsp Cinnamon, Ground
1 tsp Ginger, Ground
1/4 tsp Spices Ground Black Pepper
1/4 tsp Sea Salt
1 serving chicken stock-no salt
1/4 cup Red Lentils
1/2 cup Diced Tomatoes
1 serving Cilantro leaves
1 cup Parsley
1 cup Peas Chick
2 oz dry Whole Wheat Angel Hair Pasta
1 large Egg, Whole
1 lemon yields Lemon Juice

Recipe Directions for Moroccan meat & lentil soup

  1. heat olive oil in large stockpot over medium het. add meat (chicken, lamb, or beef) and saute 5 minutes until lightly browned on all sides, add garlic, onions (one chopped and one sliced), celery, turmeric, cinnamon, ginger, black pepper, & salt. stir well and saute 5 minutes longer. remove meat to a platter and set aside.

  2. add stock to pot and bring to a boil. drain lentils(soak overnight or put in pot bring to boil then shut off for 30 minutes-bring to a boil again and let rest 10 minutes) and rinse well. add lentils and meat to pot. reduce heat to medium. cover and simmer 1 hour. add tomatoes, cilantro and parsley. simmer uncovered 20 minutes longer, stir occasionally. if soup is too thick, add 1 c. water. add chickpeas and pasta (broken into small pieces) or rice. simmer 20 minutes or until all ingredients are tender. stir in beaten egg and juice of one lemon, cook 1 minute longer and serve immediately. garnish with lemon wedges and parsley.**if you would like this vegetarian style- omit the meat and double the amount of chickpeas and lentils, use water instead of chicken or beef stock.
