Adapted from a recipe in the first Moro cookbook - added bacon for a carnivorous husband!

Recipe Ingredients for Moroccan lentil soup

3 tablespoons olive oil
1/2 large onion, thinly sliced
4 cloves garlic, thinly sliced
1 1/2 teaspoons cumin seeds, roughly ground
250 g lentils (brown, green or yellow)
1 3/4 litres cold water
50 g bacon, cut into small pieces and fried til crisp

Recipe Directions for Moroccan lentil soup

  1. Fry the onions in the oil with a pinch of salt over a medium heat, for about 10 minutes, until sweet and golden.

  2. Add garlic and cumin and fry for another minute.

  3. Add the lentils and water, and cook for about 20 minutes until the lentils are tender.

  4. Remove from the heat and blend in a food processor or using a hand blender until almost smooth.

  5. Return to the pan, and correct seasoning. Thin the soup with water if it is too thick.

  6. Stir in the bacon bits, and heat the soup through.

  7. Serve with lemon wedges or yoghurt, olives, Harissa and crusty bread.
