Soup (can add 1/2 cup diced carrots and 1/2 cup diced celery)

Recipe Ingredients for Moroccan Lentil Soup

1 onion, chopped
3 cloves garlic
1/2 teaspoon ground ginger
6 cups water
1 cup red lentils
3 1/2 cups garbanzo beans
2 cup cannellini beans
14 1/2 ounces diced tomatoes
1 teaspoon garam masala
1 1/2 teaspoon ground cardamom
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin

Recipe Directions for Moroccan Lentil Soup

In large pot, saute onions and garlic. Add remaining ingredients and bring to a boil for a few minutes. Reduce and simmer 1.5 hours or until lentils are soft. Puree 1/2 the soup in blender and return to pot.
