Recipe Ingredients for Moroccan Lentil Soup

6 cups water
1 cup lentils
1 pinch saffron
1 T olive oil
2 cups cauliflower florets
1/2 cup chopped carrots
1/2 cup chopped celery
4 cloves garlic
1/2 T ginger
1 t cumin
3 pinches cayenne
1/4 t turmeric
1 3/4 cup chopped tomatoes
1/4 cup chopped cilantro

Recipe Directions for Moroccan Lentil Soup

  1. Bring water, lentils, and saffron to a boil in soup pot.

  2. Reduce heat to med-low and simmer covered for 15-20 minutes.

  3. While the lentils cook, heat oil in a skillet over med heat.

  4. Saute cauliflower, carrots, celery, garlic, ginger, cumin, and cayenne for 5 minutes.

  5. Add sauteed vegetables and turmeric to the lentils.

  6. Simmer covered for 10 minutes.

  7. Stir tomatoes into the pot and simmer covered another 5 minutes.

  8. Add cilantro and salt if needed.
