A tender roasted leg of lamb flavored with coriander and cumin.

Recipe Ingredients for Moroccan lamb

6 lb Lamb, leg, whole, lean, raw, choice, 1/4" trim , 5 to 7 lbs, with bone
6 tbsp garlic cloves , 4 to 8 cloves, cut into slivers
2 tbsp coriander seeds , crushed
2 tbsp fresh lemon peel , finely shredded
1 tbsp olive oil
1 tsp cumin seeds , crushed
1/2 tsp salt
1/2 tsp black pepper

Recipe Directions for Moroccan lamb

  1. 1 Trim fat from meat. Cut several 1/2-inch wide slits randomly in top and sides of roast. Insert garlic slivers into slits.

  2. 2 In a small bowl, stir together coriander seeds, lemon peel, olive oil, cumin seeds, salt, and pepper. Rub surface of meat with spice mixture. If desired, cover and chill for several hours or overnight.

  3. 3 Insert a meat thermometer into center of roast. The thermometer should not touch bone.

  4. 4 Roast in a 325 degrees F oven. For medium-rare, roast for 1 3/4 to 2 1/4 hours or until meat thermometer registers 140 degrees F. Cover with foil and let stand 15 minutes.

  5. 5 The temperature of the meat after standing should register 145 degrees F.
