Recipe Ingredients for Moroccan Lamb & Chickpea Stew

1 link Fresh Lamb Sausage
1 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 medium raw(110 g) Onion Yellow
3 tbsp Olive Oil
2 tbsp Cinnamon, Ground
1 tbsp Chili Powder
1 grams Primordial Himalayan Sea Salt
4 dash Pepper, Black
2 serving Ground Cumin
3 cloves Garlic
6 tbsp Tomato Paste

Recipe Directions for Moroccan Lamb & Chickpea Stew

On medium -high heat caramelize the thinly sliced onion in 2 tbsp olive oil in a large cast iron skillet ; add chopped garlic just before all the onion slices are translucent ; once the garlic is soft (not browned) remove all onion and garlic from the skillet ; remove sausage meat from the casing ; add 1 tbsp olive oil if needed and brown the lamb meat - breaking up the meat as it browns ; while there is only very little pink in the meat still ; at this point you should be able to spoon out the rendered fat from the lamb (you should get about 4 tbsp) ; add the cumin, cinnamon, a dash or 2 of salt and pepper, chili powder (optional), and return the caramelized onion and garlic to the skillet; cook together for about a minute ; add chickpeas and chicken stock and cook for about another 5 minutes (until chickpeas are warmed all the way through)
