Recipe Ingredients for Moroccan inspired vegatables stew

1 onion, chopped
2 garlic cloves, minced
2 tbsp olive oil
2 tsp cumin
2 tsp turmeric
1 tsp ginger, powder
1/4 tsp chili powder
14 1/2 oz tomatoes
14 1/2 oz chickpeas
350 ml water
1/2 kg sweet potatoes
150 g carrots
2 small zucchini
1 salt to taste

Recipe Directions for Moroccan inspired vegatables stew

  1. In oil soften the onion and garlic.

  2. Add spices and let it simmer few more minutes.

  3. Add tomatoes, chickpeas (with liquid) and water. Let it simmer while you prepare sweet potatoes, carrots and zucchini (Cut into bite sized pieces).

  4. Add the vegetables and simmer for about 20 min, covered. Add salt to taste.
