Moroccan Chickpea and Sweet Potatoes

Recipe Ingredients for Moroccan Chickpea and Sweet Potatoes

1 large onion, thinly sliced
5 garlic cloves, minced
1 tablespoon fresh ginger, minced
3 tablespoons red wine
3 teaspoon cumin
1 teaspoon cinnamon
2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes
1 cup water
1 teaspoon salt
1 lb. sweet potatoes, chopped
3 dates, chopped
1 cup dry garbanzo beans, cooked til tender
1/4 cup raisins
2 tablespoons lemon juice
1/4 cup sliced toasted almonds

Recipe Directions for Moroccan Chickpea and Sweet Potatoes

  1. Cook onion, ginger, and garlic in red wine 5 minutes, covered. Add spices, cook one minute more.

  2. Add water, dates and sweet potatoes. Cover and cook until tender, about 15 minutes. Add chickpeas, raisins, and lemon. Cook 5 minutes more. Garnish with almonds.
