This is adapted from Paula Wolfert's recipe from her book Mediterranean Clay Pot Cooking.

Recipe Ingredients for Moroccan Chicken with Tomatoes

1 tablespoon olive oil
1 pound chicken breast
1 pound tomatoes
1 teaspoon salt
6 ounces onion, chopped
1 tablespoon Ginger, Ground
1 tablespoon Turmeric, Ground
1 tablespoon Pepper, Black
2 teaspoons Cinnamon, Ground
1 teaspoon Nutmeg, Ground

Recipe Directions for Moroccan Chicken with Tomatoes

  1. Please use only one (1) teaspoon of the Moroccan Spice Mixture per 1 pounds chicken.

  2. Marinate boneless-skinless chicken in Moroccan spice mixture plus 1 teaspoon of salt.

  3. Heat clay pot and brown chicken pieces in olive oil. Set aside.

  4. Saute onions then tomatoes in the same clay pot, return chicken, cover and cook in low heat for an hour.

  5. Serve over rice or Moroccan flat bread.
