This recipe is from Ann Lindsay's Lighthearted Everyday Cooking, p95. It is meant to be served over couscous (prepare 1.5 cups uncooked couscous for 6 servings). "I like to serve this when entertaining - for a buffet - because it tastes terrific, can be prepared in advance, and is easily eaten with a fork, so you don't need knives. Serve with couscous (page 176) or, if it isn't available, brown or white rice. Turnip can be used as well or instead of sweet potato. (Pictured after page 122.)"

Recipe Ingredients for Moroccan Chicken Stew (Lighthearted Everyday Cooking)

567 grams Chicken
3 medium (2-1/2" dia) Onions
2 cup (8 fl oz) Water
3 tsp Ginger Root
1 tsp Turmeric, Ground
1 tsp Cinnamon, Ground
1 tsp Sugars, Granulated
0.5 tsp Saffron
1 medium Sweetpotato
4 medium Carrots
2 serving Primo Chick Peas (Garbanzo Beans)
0.25 cup Currants, Zante, Dried
0.06 cup Lemon Juice
170 grams Squash, Summer, Zucchini, Includes Skin
2 tbsp Parsley
0.25 tsp Salt, Table

Recipe Directions for Moroccan Chicken Stew (Lighthearted Everyday Cooking)

  1. In nonstick skillet or saucepan, brown cubed chicken over high heat; remove chicken to plate and set aside. Reduce heat to medium and add thinly sliced onions; cook, stirring occasionally, for about 5 minutes or until softened.

  2. Add water, minced gingerroot, turmeric, cinnamon, sugar and saffron (if using); bring to a simmer. Add cubed sweet potato and carrots (cut in chunks); cover and simmer for 20 minutes.

  3. Add chick-peas (canned or cooked), currants and lemon juice. (Recipe can be prepared to this point, cooled, covered, and refrigerated for up to 2 days. Bring to a simmer before continuing.)

  4. Add zucchini (cut into chunks) and chicken; cover and simmer for 10 minutes, or until chicken is no longer pink inside and vegetables are tender. Add chopped parsley; season with salt and pepper to taste.

  5. Cook couscous according to package directions or see page 176. Serve with stew.
