Recipe Ingredients for Moroccan Chicken

14 ounces chicken, cut into chunks
1 large onion, chopped
2 cloves garlic, chopped
2 medium carrots, sliced
1 stalk celery, sliced
1/4 tsp ginger root, minced
1/2 tsp paprika
1/2 tsp curry powder
1/4 tsp oregano
1/4 tsp cayenne pepper
1/4 tsp turmeric
1 1/2 cups chicken broth, low sodium
398 ml crushed tomatoes
1 medium zucchini, sliced
1 1/2 tsp lemon juice
19 ounces chick peas

Recipe Directions for Moroccan Chicken

  1. Cook chicken over medium heat in a large saucepan - until almost cooked, 5-10 minutes.

  2. Set chicken aside.

  3. Saute onion, garlic, carrots and celery until tender.

  4. Add ginger, paprika, curry, oregano,cayenne and turmeric.

  5. Stir fry about 1 minute.

  6. Add broth and tomatoes; add back chicken.

  7. Reduce heat to low and simmer about 10 minutes.

  8. Add chick peas and zucchini and bring to a simmer.

  9. Cook about 15 minutes until zucchini is cooked through.

  10. Stir in lemon juice and serve.
