Serving size = 1 thigh and 1/10 of sauce. Serve with Near East Roasted Garlic & Olive Oil Couscous.

Recipe Ingredients for Moroccan Chicken

2 tbsp. flour
2 tsp. ground coriander
2 tsp. cumin
2 tsp. paprika
2 tsp. brown sugar
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. pepper
956 g. skinless chicken thighs
2 tbsp. olive oil
168 g. sliced onions
2 1/2 cups chicken broth

Recipe Directions for Moroccan Chicken

  1. Combine dry (first nine) ingredients in shallow dish. Dredge chicken; save remaining flour mixture.

  2. In electric skillet, brown chicken in oil (3 minutes per side). Combine onions and remaining flour mixture; add to chicken. Stir in 1/2 cup broth.

  3. Cover and simmer (approximately 375º) for 25 minutes.

  4. Remove chicken to serving dish. Add 2 cups chicken broth to sauce; bring to a boil. Pour sauce over chicken and serve.
