Recipe Ingredients for Moroccan Chicken

24 oz Chicken
1 medium (2-1/2" dia) Onions
1 1/2 tsp Cumin
1/2 tsp Cinnamon, Ground
1 1/4 cup Vegetable Stock
1/4 tsp Chili Powder
2 tbsp Parsley, Dried
1 large Squash, Summer, Zucchini, Includes Skin
15 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 oz Lemon Juice
2 dash Pepper, Black
1 tbsp Olive Oil

Recipe Directions for Moroccan Chicken

  1. 1. Fry onion in oil until soft.

  2. 2. Add cumin and cinnamon and cook for 2 - 3 min. Add chicken, stock, and chili powder. Bring to boil, cover and simmer for 25 min.

  3. 3. Add zuchinni (cut into strips) and chickpeas (drained and rinsed). Bring back to boil and simmer for 10 - 20 min or until zuchinni is soft.

  4. 4. Add parsley and lemon juice. Add pepper to taste and serve warm over couscous, rice, or quinoa. Cut chicken into strips for serving to a baby.
