Moroccan Chicken with honey and apricots

Recipe Ingredients for Moroccan Chicken with honey and apricots

2 tbsp olive oil
4 unit+yield+from+1+lb+ready-to-cook+chicken chicken breasts
1 pt chicken stock
1 onion
4 cloves garlic
1 red pepper
3 tbsp flour
1/2 tsp black pepper
1/4 tsp curry powder
1 tsp turmeric
1 tsp cinnamon
1 tsp ginger
1/2 g cayenne pepper
2 tbsp tomato puree
2 tsp lemon juice
4 tbsp honey
60 g dried apricots
1 toasted almonds

Recipe Directions for Moroccan Chicken with honey and apricots

  1. Slice onion thinly and fry in the olive oil until soft

  2. Add chopped garlic and fry for a further minute

  3. Mix the flour and spices in a bown and add to the onion and garlic, cook for 1-2 mins.

  4. Add the stock, tomato puree, lemon juice and honey.

  5. Season with salt

  6. Chop the chicken into chunks and add to the sauce mixture with the chopped red pepper and apricots.

  7. Cook in the oven or stovetop for 30 - 40 mins

  8. Cook the rice according to manufacturer's instructions

  9. Toast the flaked almonds and sprinkle on the top before serving.

  10. I like to sprinkle some chopped fresh corriander too.
