Recipe Ingredients for Moroccan Chick Pea Stew with Chicken

1 lb boneless skinless chicken breast cut into 3/4 inch dice
1 onion
2 cloves garlic
15 oz Chick Peas
15 oz Diced Tomatoes
5 oz spinach, chopped coarsely
1 cups chicken broth
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder
1 tsp basil
1/2 tsp lemon pepper
1 dash nutmeg
1 dash cinnamon
1 tsp salt or to taste (optional)
4 tsps olive oil
2 c brown rice
2 T flour

Recipe Directions for Moroccan Chick Pea Stew with Chicken

  1. Mix cumin, onion powder, garlic powder, basil, lemon pepper, nutmeg and cinnamon in a small glass bowl.

  2. Measure rice into 3 qt or larger pot, add 2 cups water. Bring to a boil, add salt, stir, cover and reduce heat to a simmer.

  3. Cook until done, 20-40 minutes, depending on type of rice.

  4. In the meantime heat 2 tsps olive oil in dutch oven or large stew pot. Add half the chicken pieces and let cook, adding half of the seasonings.

  5. Bring the heat to high and stir until chicken is done and spices are carmelized remove to a plate and add 2 tsps olive oil to the pot, add the rest of the chicken and spices.

  6. Add raw onion and garlic to the cooking chicken and let soften slightly. Add already cooked chicken to the mix and stir.

  7. Add drained chick peas, chicken broth and diced tomatoes to the pot and stir.

  8. Thicken with 2 Tbs flour and water

  9. Serve over rice.
