High in Protein, Low in Fat. This is a Hearty Winter Stew from the mountains of northern Africa. Good with rolls or toasted pita bread triangles. May also add diced tomatoes.

Recipe Ingredients for Moroccan Chick Pea & Lentil Stew

2 breasts, chicken
4 tbsp olive oil, light
1/2 red onion
1 tsp turmeric
2 tsp ginger, ground
1 tsp cinnamon
1/2 tsp paprika
3 cloves minced garlic
2 celery stalks
1 red pepper
2 cups lentils
5 cups chick peas
6 cups chicken broth

Recipe Directions for Moroccan Chick Pea & Lentil Stew

  1. Saute chicken and chopped onion in olive oil in a 6 Quart saucepan medium heat

  2. Add celery, garlic, red pepper

  3. Add spices, garlic, and stir

  4. Add Chicken stock

  5. Add chick peas and lentils

  6. Heat to high simmer then lower heat

  7. Simmer two hours

  8. Serve with warm rolls or pita bread
