Recipe Ingredients for Moroccan Carrot Soup

5 c. chicken stock
1/2 c. diced onion
1/2 tsp. caraway seed, ground
3/4 tsp. cumin seed
1 tbsp. garlic, minced fresh
1 tbsp. lemon juice, strained fresh
1 tbsp. lime juice, fresh
1 lb. carrots, peeled, sliced in 1/4 rounds

Recipe Directions for Moroccan Carrot Soup

  1. Boil all ingredients until tender, about 20 minutes.

  2. Cool and drain, reserving the liquid. Puree the vegetables until completely smooth. Add the reserved liquid and chill.

  3. At serving time, garnish with minced coriander or parsley.

  4. One serving equals 75 calories.
