Recipe Ingredients for Moroccan Carrot Salad

1 lb carrot
1/4 cup vegetable oil
4 tbs lemon juice
1/4 cup cilantro
3 cloves garlic
1 tsp paprika
1 tsp cumin
1/4 tsp cayenne

Recipe Directions for Moroccan Carrot Salad

Coarsely grate carrot in food processor, adding the cilantro toward the end to just mix in. The in a large bowl mix all the ingredients together and refrigerate for a least two hours or up to two days. Serve chilled or at room temperature.
