Inspired by Mark Bittman's salad suggestions in the NYT a while back. I have no idea if the amounts I have here will actually work but just wanted to get an idea of how many calories, etc., were in it; I'll come back and tweak if I need to.

Recipe Ingredients for Moroccan Carrot Salad

2 carrots, shredded
1 T. olive oil
1/2 t. toasted cumin seeds
1 T. lemon juice
1/4 c. fresh cilantro
1/4 c. currants

Recipe Directions for Moroccan Carrot Salad

Um. It's pretty basic. Shred carrots, toss w/other ingredients; I suspect you'll have to toast your own cumin seeds. Add salt and pepper to taste at the end.
