These are traditionally kabobs made with lamb. I substituted bison to cut the fat, and find it easier to do as burgers. This, with a generous tossed salad, makes a great meal. Adapted from Arabesque.

Recipe Ingredients for Moroccan Bison Burgers

2 lbs ground bison
1 onion, finely chopped
1/2 cup parsley, chopped
1/2 cup coriander, chopped
1/3 cup fresh mint, chopped
1/2 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1 pinch of cayenne

Recipe Directions for Moroccan Bison Burgers

  1. Put all of the ingredients in a large bowl. Mix well and work with your hands into a soft paste. Wash your hands and rub them with olive oil. Take lumps of the paste and fashion into 6 burgers.

  2. Broil or grill until done.

  3. Serve hot with good bread and a salad of cucumber, tomato, and red onion, dressed with lemon juice and olive oil.
