This is my adaption of McCormick's recipe. they called for kidney beans, I don't care for. Also they had you serving this over couscous. I prefer brown rice.

Recipe Ingredients for Moroccan Bean and Pepper Stew

1 tbsp Extra Virgin Olive Oil
2 cup, chopped Peppers, Sweet, Red
2 cup, cubes Squash, Winter, Butternut
1 1/2 cup, chopped Onions
16 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
14 1/2 oz Diced Tomatoes
1 cup (8 fl oz) Water
2 tsp Cinnamon, Ground
1 tsp Garlic Powder
1/2 tsp Cumin
1/2 tsp Ground Ginger
1/4 tsp Spices Crushed Red Peppers

Recipe Directions for Moroccan Bean and Pepper Stew

Heat oil in 3 qt saucepan on med-high temp. Add bell pepper (I used yellow, orange and red peppers), squash and onions, cook til vegetables are softened. Add spices, cook 1 minute more. Add remaining ingredients. Cook 20 minutes or more til vegetables are tender. Serve over rice or couscous. Note: drain beans, don't drain diced tomatoes.
