Very wholesome and flavourful! Kids love these and they freeze very well.

Recipe Ingredients for Morning Sunshine Muffins

3 cups whole wheat flour
4 tsp baking powder
2 tsp cinnamon
2 tsp baking soda
1/2 tsp ground ginger
1/4 tsp salt
2 eggs
1 c packed brown sugar
1 c mashed bananas
2/3 c yogurt
1/3 c vegetable oil
2 c carrots
1 c chopped walnuts
1 c coconut

Recipe Directions for Morning Sunshine Muffins

  1. Whisk together four, baking powder, soda, cinnamon, ginger and salt.

  2. in a separate bowl, whisk together eggs, sugar, bananas, yogurt and oil.

  3. pour over dry ingredients then sprinkle with carrots, walnuts and coconut

  4. mix until dry ingredients are just moistened

  5. bake at 375'F for 30 mins then let cool in pans on cooling rack for 10 mins before removing to cool completely.
