Recipe Ingredients for Morning Pear Muffins

1 1/4 cup skim milk
1/3 cup maple syrup
1/8 cup canola oil
1/8 cup unsweetened apple sauce
1 egg
2 cups all bran cereal
3/4 cup whole wheat flour
1/2 cup all purpose flour
1 tbsp baking powder
3/4 tsp nutmeg
1/4 tsp salt
1 large pear
1/2 cup prunes
2 tbsp wheat germ

Recipe Directions for Morning Pear Muffins

  1. Preheat oven to 350 F and place rack in center of oven. Lightly coat 12 cup muffin pan with cooking spray.

  2. In a medium bowl mix milk, syrup, oil and eggs. Stir in bran flakes and let stand for 5 min.

  3. In another bowl, whisk together the flours, baking powder, nutmeg and salt. Make a well in the centre of the dry ingredients and pour in the bran mixture. Stir just until dry ingredients are moistened. Fold in the pear and prunes. Divide the batter equally among the muffin cups. Sprinkle 1/2 tsp of wheat germ over each muffin. Bake at 20-25 min or until tops of muffins feel springy when pressed gently. Remove the pan from the oven and allow the muffins to cool in the pan on a wire rack for 10 min before removing them from the pan.
