Morning Muffins Recipe

Moist, chewy muffins. (Adapted from Gold Medal Flour recipe on flour sack.)

Recipe Ingredients for Morning Muffins

2 eggs
1/4 cup vegetable oil
1/2 cup applesauce
1/4 cup skim milk
2 tsp vanilla
2 cups flour
1 cup brown sugar
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp salt
1 1/2 cup shredded carrot
1 cup shredded apple
1/2 cup raisins

Recipe Directions for Morning Muffins

  1. Heat oven to 350 degrees. Prepare muffin cups

  2. In large bowl, beat eggs, oil, milk, applesauce and vanilla with wire whisk until well blended. Add flour, brown sugar, baking soda, cinnamon and salt; stir just until dry ingredients are moistened. Stir in carrots, apple, raisins. (You may add 1/2 cup of sliced almonds and/or 1/2 cup coconut, but it takes the recipe down about a half a "nutritional grade" for some reason.)

  3. Divide batter evenly among muffin cups, filling each about 3/4 full. Sprinkle sliced almonds over batter if desired.

  4. Bake 20 - 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan.
