Whole grain, high fiber, mini muffins great for snacks or breakfast.

Recipe Ingredients for Morning muffins

1/4 cup flour
1/4 cup wheat flour
1/2 cup fiber one cereal
135 grams (1 cup) Bob's red mill high fiber cereal
1/4 cup brown sugar
1/4 cup Splenda
1 tsp baking powder
1/2 tsp baking soda
2 2/5 grams (1/2 tsp) lite salt
1 tsp cinnamon
4 oz (1/2 cup) light and fit plain yogurt
1/2 cup egg beaters
2 tbs canola oil
1 cup carrots, shredded
1 banana, mashed
1/2 cup apple sauce
1 tsp vanilla extract

Recipe Directions for Morning muffins

  1. mix dry ingredients

  2. mix wet ingredients

  3. mix together and spoon into mini muffin tins

  4. bake 375 for 10-12 minutes

  5. cool on rack
