Recipe Ingredients for Morning Glory Muffins

1 1/2 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1/2 cup Sugars, Granulated
2 tsp Baking Powder
1/2 cup Wheat Flour, Whole-grain
2 tsp Salt, Table
2 tsp Baking Soda
1 tbsp Cinnamon, Ground
8 oz Carrots
6 oz Apples
1/2 cup Coconut Unsweetened
1/2 cup, chopped Almonds
1/2 cup Raisins, Seedless
4 large Egg, Whole
1/2 cup Vegetable Oil, Canola
2 tsp Vanilla Extract

Recipe Directions for Morning Glory Muffins

  1. Preheat oven to 375.

  2. Sift together dry ingredients, set aside.

  3. Mix carrot, apple, coconut, almonds and raisins in a large bowl.

  4. Add eggs, oil and vanilla; stir to combine.

  5. Stir in the flour mixture just until blended. Do not overbeat

  6. Scoop into muffin tins lned with papers and bake for 20-25 minutes.
