Recipe Ingredients for Morning Glory Muffins

2 cups flour
1 3/4 cup sugar
2 tsp baking soda
1/2 tsp salt
2 tsp. cinnamon
2 cups carrots, grated
1/2 cup raisins
1/2 cup walnuts, chopped
1/2 cup flaked coconut
1/2 cup pineapple, crushed, drained
3 eggs
1 cup oil
2 tsp vanilla

Recipe Directions for Morning Glory Muffins

  1. mix the flour, sugar, baking soda, salt, & cinnamon in a bowl.

  2. In a seperate bowl mix, carrots raisins, walnuts, coconut,& pineapple.

  3. Add lightly beaten eggs, oil, & vanilla.

  4. Mix in the flour mixture until mixed. Do not overmix.

  5. Put in paper lined muffin pans.

  6. Bake in 350 degree oven for 20 minutes
