Recipe Ingredients for Morning Glory Muffins

2 1/2 cups flour
1 1/4 cups sugar
3 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup unsweetened applesauce
1/2 cup Canola oil
1 teaspoon vanilla
2 cups grated carrots
6 ounces grated tart apple (peeled)
8 ounces crushed pineapple, drained
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts

Recipe Directions for Morning Glory Muffins

In large bowl, combine dry ingredients. In another bowl, combine eggs, applesauce, oil, & vanilla. Add to dry ingredients; stir just until moistened. Add fruit & nuts. Divide into 24 muffin cups. Bake @ 350 for 20-24 minutes.
