Lovely muffin recipe with apple, carrot, zucchini, and cinnamon.

Recipe Ingredients for Morning Glory Muffins

2 cups apple, chopped
1 cup shredded carrot
1 cup shredded zucchini
3/4 cup raw sugar
2 eggs, slightly beaten
1/2 cup oil
2 tsp vanilla
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 cup raisins

Recipe Directions for Morning Glory Muffins

Combine first 4 ingredients in large bowl. Add eggs, oil, and vanilla. In separate bowl, mix together dry ingredients. Add raisins. Add wet ingredients. Fill muffin cups 2/3 full. Bake until lightly brown at 325 for 25 min.
