1 cup Whole Wheat Pastry Flour
0.33 cup Whole Wheat Pastry Flour
0.5 cup Sugars, Granulated
0.25 cup, packed Sugars, Brown
10 grams Baking Soda
0.25 tsp Salt, Table
1 tsp Cinnamon, Ground
0.5 tsp Cinnamon, Ground
2 medium Egg, Whole
5.3 oz Canola Oil, Refined, Organic
1 tsp Vanilla Extract
1 medium (2-3/4" dia) (approx 3 per lb) Apples
0.5 cup, packed Raisins, Seedless

Recipe Directions for Morning Glory Muffins

In a large bow, mix together flour, sugar, brown sugar, baking soda, cinnamon, and salt. Break up any brown sugar lumps with your fingers or wooden spoon. In a separate bowl, whisk together eggs, oil and vanilla. Then add to flour mixture ans stir until combined. Add apples, raisins, carrots, walnuts and 1/4 cup coconut. Stir gently until well combined. Spoon batter into 16 paper-lined muffin tins, filling each 2/3 full. Topp evenly with four remaning teaspoons of cocnut. Bake 25-30 mminutes @ 350
