Recipe Ingredients for Morning Glory Muffins

2 1/2 cups whole wheat flour
1 1/4 cups brown sugar
1 cup oatmeal
3 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs
2/3 cup applesauce
1/2 cup vegetable oil
1 medium banana
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 cup pineapple tidbits
2 cups Trail Mix, Regular

Recipe Directions for Morning Glory Muffins

  1. Preheat oven to 350 degrees.

  2. Combind flour, oatmeal, soda, powder, salt, and cinnamon in a large bowl.

  3. In a medium bowl beat eggs, applesauce, oil, banana and vanilla. Add to flour mixture.

  4. Add shredded apple, carrots and trail mix to batter.

  5. Bake in greased muffin pans 20-24 min, or until toothpick inserted in center comes out clean.
