Really good, filling muffin. Like the Starbucks one, but not as sweet!

Recipe Ingredients for Morning Glory Muffins

2 cup whole wheat flour
1 1/2 cup all-purpose flour
1 cup brown sugar
4 tsp. baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 cup honey
2/3 cup milk
4 eggs
2 tsp vanilla
3 cup shredded carrots
1 1/2 cup sunflower seeds
3/4 cup raisins

Recipe Directions for Morning Glory Muffins

  1. Place 36 paper liners in muffin cups.

  2. In a large bown, stir together whole wheat and all purpose flours, brown sugar, soda, salt, cinnamon and nutmeg.

  3. In another bowl, stir together the honey, oil, milk, beaten eggs and vanilla.

  4. Make well in center of dry ingredients;

  5. add the honey mixture and stir just ot cmbine.

  6. Stir in the carrots, sunflower seeds and raisins.

  7. Spoon batter into muffin papers, filling almost full.

  8. If necessare, chill batter while one batch freezes then remove frozen muffins and repeat process.

  9. Cover each muffin pan with aluminum foil and freeze until firm, about 2-3 hours.

  10. To Bake: Preheat oven to 375.

  11. Remove as many frozen muffins as you need from the freezer; place in muffin pan.

  12. Bake 18-20 min until a toothpick inserted in center ofn one muffin coumes out clean.
