A great take along in the morning...

Recipe Ingredients for Morning Glory Muffins

1/2 lb whole wheat flour
1/2 lb oat flour
1/4 c Splenda or other non calorie sweetener
4 tsp baking soda
4 tsp cinnamon
1 lb grated carrots
6 oz raisins
4 oz pecan pieces
4 oz shredded coconut
6 oz grated apple
1 1/2 c egg beaters
11 oz applesause
4 tsp vanilla

Recipe Directions for Morning Glory Muffins

  1. Mix dry ingredients together and set aside. Combine carrots, coconut and apple. Mix the carrot mixture into the dry ingredients. Whisk the liquid ingredients in a separate bowl. Add liquid ingredients tot he dry/carrot mix. Stir until just combined.

  2. Bake in a muffin tin lined with a cupcake liner at 350 degrees for 25 minutes

  3. About 18 muffins
