Recipe Ingredients for Morning Glory Muffins

2 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1 apple
1/2 cup raisins
1/2 cup coconut, shredded
1 cup carrot, grated
3 eggs
1/2 cup canola oil
2 teaspoons real vanilla extract

Recipe Directions for Morning Glory Muffins

  1. Grease and flour 24 muffin tins. preheat the oven to 350 degrees

  2. Sift flour, sugar, baking powder,cinnamon, and nutmeg into a larg mixing bowl. Add the grated apple, raisins, coconut, and carrot. Mix together thouroughly, until the mixture resembles a coarse meal. In a separate bowl, beat the eggs slightly and add the canola oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and quickly combine. Fill the muffin tins with the batter until they are 3/4 full. Bake for 20 to 24 minutes or until the muffins are golden brown.
