Muffin has little bit of everything - carrots, raisins, apple butter, wheat germ, and nuts. A perfect start for the day.

Recipe Ingredients for Morning Glory Muffins

1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
3/4 cup splenda
1 T. ground cinnamon
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
2 cups grated carrots
1 apple - peeled, cored, and chopped
1 cup raisins
1 egg
1 egg white
1/2 cup apple butter
12 T. milled flax seed
2 T. chopped pecans
2 T. toasted wheat germ

Recipe Directions for Morning Glory Muffins

  1. Preheat oven to 375 degrees F. Lightly oil 12 muffin cups, or coat with nonstick cooking spray.

  2. In a medium bowl whisk together egg, egg white, apple butter, and vanilla.

  3. In a large bowl sift together flours, splenda, cinnamon, baking powder, baking soda, and salt. Add in milled flax seed.

  4. Stir in carrots, apples, and raisins. Stir in liquid mixture. If mixture is too thick add a splash of fat-free milk just enough to moisten all ingredients. Mixture should be somewhat dry and thick.

  5. Spoon batter into prepared muffin cups, filling them about 3/4 full.

  6. In a small bowl, combine nuts and wheat germ; sprinkle over the muffin tops.

  7. Bake at 375 degrees F. for 15 - 20 minutes, or until the tops are golden and spring back when lightly pressed.
