Carrot, apple, raisin muffins with a touch of cinnamon is a great way to start your day. Fruits and veggies in a power packed muffin.

Recipe Ingredients for Morning Glory Muffins

1 cup all-purpose flour
1 cup whole wheat flour
1 1/4 cups splenda granular
1 tablespoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups grated carrots
1 apple
1 cup raisins
4 egg whites
3/4 cup unsweetened apple sauce
1 tablespoon vanilla extract
2 tablespoons toasted wheat germ

Recipe Directions for Morning Glory Muffins

  1. Preheat oven to 350 degrees F. Lightly oil 18 muffin cups, or coat with nonstick cooking spray.

  2. Peal carrots and apple. In a food processor or with grater, grate carrots and apple.

  3. In a medium bowl, whisk together egg whites, apple sauce, and vanilla.

  4. In a large bowl, stir together flours, splenda, wheat germ, cinnamon, baking powder, baking soda and salt.

  5. Stir in carrots, apples and raisins into apple sauce mixture. Combine with flour mixture until just moist.

  6. Spoon the batter into the prepared muffin cups, filling them about 3/4 full.

  7. Bake at 350 degrees F for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.
