Recipe Ingredients for morning glory muffins

2 cups whole wheat flour
1 1/4 cup splenda
1 tablespoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups grated carrot
1 apple - chopped
1 cup raisins
3 egg whites
1/4 cup vegetable oil
1/2 cup unsweetened applesauce
1 tablespoon vanilla
2 tablespoon walnuts
2 tablespoon wheat germ
2 tablespoon flax seed

Recipe Directions for morning glory muffins

  1. preheat oven to 375, light oil muffin cups or spray with non stick cooking spray.

  2. whisk together eggs, applesauce, oil and vanilla.

  3. stir together flour,sugar,cinnamon,baking powder,soda and salt. Stir in carrots, apples and raisins, stir in applesauce mixture. Spoon batter into the muffin cups

  4. Combine walnuts and wheat germ, sprinkle over muffin tops.

  5. Bake for 15 to 20 minutes.
